Vegan School/Work Lunch Ideas

Hey guys! Today I wanted to share with you my vegan lunch ideas that you can take to school, uni or work, basically wherever you want to take a packed lunch with you. I am using here Sistema’s container that I have been using for a while now and I can honestly recommend them. This is not a sponsored post, I just genuinely like these containers and I find them perfect for my lunches :)

#1 Hummus, avocado and veggies sandwich with side of fruit and veggies

bread of choice (make sure it’s vegan!)

Spread hummus onto both pieces of bread, add spinach onto both of them, place avocado, cucumber and tomato on top of on of them, put the two pieces together and you have a delicious sandwich. For the sides you can add whatever you want. I went for grapes, carrots and bell pepper.

#2 Beetroot salad with a side of pita bread and fruit

300g store bought beetroot salad with onion, vinegar, sugar, salt and pepper (I used this one)
2 small/medium potatoes (ca. 340g)
ca. 225g sauergurken/salted cucumbers
105g rinsed black beans (half of a can)
1tsp dried parsley
0.5tsp garlic granules
salt and pepper to taste

Cook your potatoes: I cooked mine whole in a microwave. Wrap each potato in a damp paper towel and put in the microwave for around 6-8 minutes on the highest setting. In the meantime chop the cucumbers, rinse the beans and combine with the beetroot salad in a big bowl. Add spices. When the potatoes are ready take them out of the microwave and carefully cut in half to make them cool faster. When they are ready to touch cut into cubes. They don’t have to be very small because they will fall apart anyway. Mix everything together and transfer as much as you want into your lunch container. Tear the pita bread and add it alongside with grapes.

#3 Pasta salad

pasta of choice, I used ca. 250g of corn pasta (if using wheat pasta then use more other ingredients or less pasta)
1 avocado mashed
half of a red bell pepper
half a can of corn
juice of half of a lime
handful roughly of fresh basil, chopped
1 tsp dried oregano
salt and pepper to taste

Cook pasta according to the instructions on the package. When done rinse it with cold water and add to a bowl. Add the rest of the ingredients and mix well. Add desired amount to you lunch container along with an apple and carrot sticks.

#4 Buckwheat salad

cooked buckwheat, I always cook 1 cup of buckwheat with 3 cups of water so that I can use it later during the week, so cook more and then eyeball how much you need for this salad :)
2 handfuls of spinach, chopped
2 tomatoes
half of a red bell pepper
a few salted cucumbers, you can substitute for normal cucumbers but then add salt
half a can of corn
1 tsp dried parsley
0.5tsp dried summer savory
salt and pepper to taste

Chop all the veggies and add to a bowl. Mix in desired amount of buckwheat and spices. Add to your lunch container along with some fruit of choice. I opted for grapes and dates cause that’s what I had on hand.

#5 Fruit & bliss balls

Bliss Balls:
25 fresh mazafati dates (ca 200g pitted dates)
75g almonds
15g pumpkin seeds
10g brasil nuts
25g shredded coconut
1 heaping tbsp carob powder
splash of water to help it blend and stick (if needed)

First add everything except for dates and water into a high speed blender or a food processor and grind it into a flour like consistency. The add dates and a bit of water if needed. Process until thick and moldable. Shape into little balls and place in the freezer for about an hour or two, until hardened how you like it.
  Prepareyour fruit part. Cut up your favorite fruit and place in a container. I went for a banana, nectarine, kiwi, apple and grapes.
