As well all know potatoes are any starch based vegan best friend. So delicious, healthy, nutritious, filling… What more could you ask for? Oh, super easy to make too. All potatoes are amazing, sweet or normal, all kinds. However, I have only tried normal potatoes and normal sweet potatoes (orange on the inside) but I am sure I would love other kinds too! I love baked potatoes the most. Even if the particular variety you are using does not taste the best, you can turn it into a super tasty meal just by baking them. But I also love love love boiled and steamed potatoes. Yet, the variety has to be good on its own otherwise I would not like them at all.
Today I would like to share with you my foolproof recipe for the best baked potatoes.
Spices of choice: potato mix, tandoori masala, salt and pepper or smoked paprika
1. Preheat the oven to 200°C. Line the baking tray with parchment paper.
2. Cut potatoes into wedges. I like to cut them in half on the longer side and then cut into 3 long wedges (longer side) or cut them once again in half and then into 4 long wedges.
3. Place your potatoes in a bowl. Add spices of choice and mix well.
4. Place on the baking tray and bake for around 45-55 minutes or until they are nice and brown on the outside.
I like to eat mine with some lettuce and sometimes a bit of ketchup or sriracha.
