Protein Pancakes | Vegan and Gluten-free

Pancakes are the ultimate Sunday breakfast food and I think everyone – both meat eaters and vegans – can agree on this. And as satisfying and pleasant it is to indulge on original pancakes full of gluten and sugar and all that, it is even more satisfying when you know you can feast guilt free!

And here comes my recipe for these babies. Vegan, Gluten free, Refined Sugar free and full of good plant Protein for weight loss and overall health.

All you need are:
coconut flour
chickpea flour
vanilla extract (or paste or whatever)
agave syrup/maple syrup
water, oil and baking powder
salt
plant milk

Coconut flour is full of fiber and protein and is low in fat. It also contains sodium and iron – two very important chemicals in our body.

Chickpea flour is low in fat (especially saturated fat), high in fiber and protein. It contains among others vitamin K, vitamin C, vitamin B6, Thiamin, Folate, iron, magnesium, phosphorus and potassium.

Plant milks are better for you then dairy. They are lower in fat and in calories, contain no pus and mucus and of course are naturally lactose free. They also don’t contain antibiotics and hormones.

Agave syrup has a low glycemic index and maple syrup is full of minerals like manganese and zinc. They are both a better alternative to white sugar but also in moderation!

So as you can see, these pancakes are good for you and also super easy to make. Just whisk ingredients together and fry. As simple as that. Also, they taste absolutely divine. Trust me. I think these are the best gluten free and vegan pancakes I have ever made.

Ingredients:

1/3 cup coconut flour
2/3 cup chickpea flour
300 ml plant milk
1 tsp vanilla extract or vanilla bean paste
1 tbsp agave syrup or maple syrup
1 “egg” – whisk together 2 tbsp water, 2 tsp baking powder and 1 tsp vegetable oil
pinch of salt
For the chocolate sauce:
mix 1 tsp cacao powder with 2 tsp agave/maple syrup

Preparation:

1. Add coconut and chickpea flour into a mixing bowl.

2. Prepare the “egg” and add to the flour.

3. Add the rest of ingredients and whisk until smooth.

4. Heat some oil in a frying pan (or use a non-stick pan if you wish). Fry each pancake on both sides, flipping when little bubbles appear on the surface.

5. Stack them on top of each other, decorate and serve.
