It has been quite a long time since I posted anything. I am really sorry and here I am going to explain to you why.
This year was my final year at high school and of course it was followed by final exams – polish Matura. I tried to write something every week or at least every month during autumn and beginning of winter but later, in 2016 it was impossible for me. I had to study so much, I literally did 2-3 papers in chemistry and maths. Basically those last 5 months almost were about studying studying studying…

This year has been a year of great changes for me.
I have learned to stop blaming myself for everybody’s unhappiness.
I have learned to love my body no matter how it looked.
I have learned to open myself to others.
I have learned to keep a positive attitude no matter what.
I have learned to be happy.
I couldn’t have done that without my parents’, my boyfriend’s/best friend’s help and without going vegan and finding out about the vegan community.

I wasn’t exactly planning to make this pie. It was only because my grandma planned to come around on Sunday. Otherwise I would not even go into my kitchen that day. But she decided, when I was in the middle of the process, that she is not coming and well… I had to finish it.

I’ve been craving quinoa for some time now, but I just couldn’t get round to cooking it. There was always something. Something else for dinner. No time. Leftovers that had to be eaten. Always something. But yesterday after the whole week of tests I decided to treat myself to quinoa salad. I came home quite early because I had only one exam in Chemistry that day, which began at 8:30 and the time given was 3 hours but I finished it half an hour earlier. It was neither hard nor easy. Some tasks were extremely obvious, but on a few I had to strain my mind to work out the answer. It took so long mainly because it consisted of 40 tasks, none of which was an ABC question!

It finally happened. I tested my abilities with these muffins. Why? I am good at backing from a recipe, but usually when I try to invent something it doesn’t turn out how I wanted it to. What is more, I used to bake cakes and cookies that weren’t vegan… So when I was starting on preparing these I had really dark thoughts. I anticipated them to come out, I don’t know, maybe a bit under-baked or not sweet enough, too dense, too moist or that they would not rise at all.
